Plant description

Jerusalem artichoke is a herbaceous perennial (it dies down each year but returns to growth the following spring) that produces delicious edible tubers at the end of its growing season in autumn. It makes a fantastic ornamental plant for the back of garden beds where the bright yellow daisy flowers will stand out in autumn. The stems die down at the end of autumn and the edible tubers can then be dug up progressively through winter for the kitchen. They tend to dry out and soften so it is best to only lift what you will use within a week. When the tubers sprout in spring feed them with a complete general purpose fertiliser and keep them well watered through the growing season for a bountiful harvest.
