Plant description

An annual plant growing to two metres high, Yacon has crisp edible tubers which can be eaten raw or cooked. It is nice grated into salads, made into juice, and if cooked can be steamed, mashed and baked. Best grown in cool to warm temperate climates that have only mild frosts. Plant tubers in early spring, and it will grow vigorously until knocked down by frost when the tubers can be dug. There will be two types of tuber, red rhizomes which are good for propagation and larger brownish tubers which are the ones to be eaten. Store the rhizomes in slightly moist sand until spring. The tubers can be stored in a cool dark place where they will become sweeter. Freshly dug tubers can also be sweetened by exposing to the sun for two weeks.
