Plant description

The icecream bean tree is a large evergreen tree, and is good for shade, food and timber. It has spreading branches and large pom pom flowers, followed by edible pods containing a thick juicy white pulp that tastes like vanilla icecream, and with the texture of cotton wool. The tree is fast growing and is also useful for its nitrogen fixing properties. The pods can be as long as a metre, and are harvested from summer, when the pod becomes fully rounded.

The icecream bean likes a warm, humid climate, and does well on a wide range of soils, but prefers an acid soil. It doesn't tolerate frosts or droughts very well. It will begin to bear pods from around the third year of growth. It can flower all year round.
